Avocado Toast gets a do-over

Avocados have gained worldwide fame of late as a super fruit  (yes, it’s a fruit) that has many health benefits and should be part of a healthy diet.

Let’s start with the popular avocado toast.

Smash the pulp of ripe two avocados in a bowl with a fork and add a few drops of lemon juice to prevent the avocados from turning brown. Add a bit of salt.

Grill 2 slices of country style bread or brown the slices in a little olive oil in a frying pan. Top the slices with fresh lettuce leaves and spread the avocado over the lettuce. Add some crisp bacon or ham, a few pistachio nuts and some shavings of Parmigiano Reggiano or other cheese over the top. Drizzle with a little extra virgin olive oil.
