Too hot to cook? Try this summer salad
It is shaping up to be a hot summer and that means even cooking at the grill can be uncomfortable. That is when I turn to a rotisserie chicken from my local market and make a cool chicken salad. Sometimes to save the day, you just have to give in.

Sizzling Summertime Salad
INGREDIENTS
Serves 4 to 6
Dressing
1 cup mayonnaise
3 tablespoons spicy mustard
Dash hot sauce
2 tablespoons extra virgin olive oil
¼ teaspoon salt
¼ teaspoon sweet paprika
Grinding black pepper
Add
4 cups shredded cooked chicken
1 cup pickled red onion, diced
4 tablespoons fresh thyme
4 to 6 cherry tomatoes cut into quarters
DIRECTIONS
Combine all the dressing ingredients in a large bowl. Add the chicken, red onion, thyme and combine well. Add the tomatoes and garnish with a few thyme leaves.
