Italian Chicken Salad a perfect light supper
Now that spring is finally here, time to think about what’s for supper and lighten up the taste of things with some easy recipes like this delicious Italian style chicken salad. Easy to prepare using a store-bought rotisserie chicken, this is a healthy version of the mayonnaise-doused classic. For this salad, avocado oil was used but extra virgin olive oil is fine too. Add-ins could be farro, chickpeas, peas, shaved carrots, olives, radishes.

Italian Chicken Salad
INGREDIENTS
4 cups shredded or diced cooked chicken
2 ribs celery, diced
2 scallions diced
4 tablespoons avocado or extra virgin olive oil
3 tablespoons fresh squeezed lemon juice
1 teaspoon Dijon mustard
1 tablespoon fresh thyme leaves
4 leaves fresh basil chopped
1 avocado, peeled and cut into thin slices
1 cup quartered cocktail cherry tomatoes
Salt and pepper to taste
DIRECTIONS
In a bowl combine the chicken, celery and scallions and toss well.
In a separate bowl whisk together, the oil, lemon juice and mustard and pour over the chicken mixture. Toss to combine. Stir in the thyme and basil and toss. Add the avocado and tomatoes and gently toss. Add salt and pepper to taste. Serves 4
