Chicken thighs a quick, easy supper
Make a quick supper with chicken thighs.
Inexpensive, juicy and full of flavor, they can be ready in a flash. Use your favorite store bought or homemade rub. I like a combination of minced garlic, oregano, salt, pepper and dried pepper flakes in a one-to-one ratio. Figure on 1 tablespoon of rub per thigh.
Dry the meat with paper towel and add rub to each one on both sides. Set aside. Heat 2 tablespoons avocado or sunflower oil in a saute pan until hot. Add a few fresh basil leaves, the thighs and brown well on all sides. Cook until 165F internal temperature is reached.
Add juice of one large lemon and serve.
